So again, I have not been the best wife and cooked a yummy meal! But thankfully my mom and dad did this past weekend! So, today I am going to share with you the recipe my mom uses for chicken spaghetti. It is delicious!!
Ingredients:
- 4 cups boiled, deboned chicken, cut up, boiling water reserved
- 8 ounces thin spaghetti
- 4 cups grated Cheddar cheese, divided use
- 1 stick butter or margarine
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 (4-ounce) jar diced pimentos, drained
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 2 teaspoons garlic powder
- 2 (10.75 - ounce) cans cream of mushroom soup
- 1 can evaporated milk
1. Cook spaghetti in water used to boil chicken. Drain, reserve broth.
2. Place chicken and drained spaghetti in a lightly greased 13 by 9 inch casserole dish.
3. Sprinkle with 2 cups of the grated cheese. Set aside.
4. In heavy skillet, melt butter and saute onion, bell pepper and pimentos until tender. Add salt, pepper and garlic powder and pour over chicken, spaghetti and cheese.
5. Add soups and evaporated milk and stir until well blended. If mixture is dry, add some of the reserved broth. Top with remaining cheese.
6. Bake at 350 degrees for 30 to 40 minutes until hot and bubbly.
