Five Things That Make Me Happy Friday!

I can't believe we have already had two weeks of school!! I am so happy today is Friday because that means I get to sleep in tomorrow morning!! Nothing much has been going on this week other than school, PD (yuck), and Zumba! I absolutely love Zumba!! It is such a good workout plus you have fun while doing it! We are still training for our marathon. We are supposed to run 9 miles this weekend...we will see. Ha. It is too hard to run in this heat. Hopefully I can do it though! I hope you have all had a great week!! Happy Friday!!

Classroom update!

I had a great first week of teaching kindergarten!! I am already in love with each and every student! I can't wait to see them tomorrow morning! I am definitely worn out. It is interesting being a kindergarten teacher. Kids say the cutest things! Some things that happened this week:

- I received a lot of hugs
- We did a lot of singing and dancing
- Most of my students already know how to spell and write their name! Woo hoo!
- My students brought me sweet notes and pages they colored
- I received my first gift (a watermelon). How did she know I loved watermelon?!
- I had my first incident with a child throwing up. Needless to say I was not prepared for that one, but he is fine and we all survived.

This week we start learning about the letter O. After searching the internet for hours, I found a lot of cute activities to help teach the letter O. Here is one thing I am doing in my art center this week:

I hope you all have a great week and I hope to be blogging more! One day I will have a new recipe for Tasty Tuesday, but until my life slows down we will be eating grilled chicken, spaghetti and cereal.

A Sneak Peak...

God has answered so many prayers lately. Jonathan and I both have jobs now! I am now a Kindergarten Teacher!!!!!! I am soooo excited and I can't wait to start school on Monday! I don't have much time to write, but I wanted to give you a before and after pic of my classroom! It isn't finished yet, so I will give more detailed pictures later. Five Things that Make me Happy Friday!

Happy Friday everyone!! I have had a great week, hope you have as well! It was my first week with no work so I was able to get a lot done around the house and rest! I started cleaning out my extra bedroom and started the makeover process! I must say it looks much better than before! I absolutely hate having a "junk room." In a few days it will no longer be a junk room but a nice guest room!

Tasty Tuesday: Mexican Chicken

Sorry I haven't had a Tasty Tuesday post in a really long time!! I have been terrible at cooking lately! We have had a lot of cereal and sandwiches for dinner. Tonight I changed my bad habit and cooked Mexican Chicken. I found the recipe here!


Ingredients:
- 1 cup fat-free, less-sodium chicken broth
- 2(4.5 ounce) cans chopped green chiles, divided
- 1 3/4 pounds skinless, boneless chicken breasts
- 2 teaspoons olive oil
- 1 cup chopped onion
- 1 cup evaporated skim milk
- 1 cup shredded Monterey Jack cheese
- 1/4 cup (2 ounces) light cream cheese
- 1 (10 ounce) can enchilada sauce
- 12 corn tortillas
- 1/2 cup shredded extra-sharp cheddar cheese
- crushed tortilla chips (I used Doritos)

Steps:

Combine broth and 1 can of chiles in a large skillet; bring to a boil. Add chicken, reduce heat and simmer for 15 minutes or until chicken is done. Remove chicken from cooking liquid, reserving cooking liquid. Shred chicken with two forks, set aside.

Heat oil in a large nonstick skillet over medium-high heat. Add 1 can of chiles and onion; saute 3 minutes or until soft. Add reserved cooking liquid, milk, Monterey Jack Cheese, cream cheese, and enchilada sauce. Stir in shredded chicken; cook 2 minutes. Remove from heat.

Place 4 tortillas in the bottom of a 2 quart casserole dish. Spoon 2 cups chicken mixture over the tortillas. Repeat layers twice ending with chicken mixture. Spring with cheddar cheese and chips. Bake at 350 degrees for 30 minutes or until thoroughly heated.
