Tasty Tuesday!

Happy Tuesday! Today I have two great recipes, Enchiladas and a Strawberry Pie!

The students I work with always say, "That's easy breezy, really cheesy," so in honor of my students, I will call my enchiladas Easy Breezy, Really Cheesy Enchiladas! They are super easy to make and of course cheesy.

Ingredients:
- 1 pound lean hamburger meat browned and drained
- 3 cans enchilada sauce (I use one hot and two medium)
- 1 package of tortillas (I used the package of 8)
-1 pound of shredded cheese

1. Heat oven to 350 degrees
2. Brown meat and drain; pour one can of enchilada sauce in cooked meat
3. Pour one can of sauce in a greased 9 x 13 pan
4. Dip tortillas in sauce. Spoon the meat mixture and some cheese in the tortillas
5. Roll up and stack together. Continue with the rest of the tortillas
6. Cover the rolled tortillas with the rest of the cheese
7. Cover with foil and bake about 30 minutes



One of Jonathan's favorite desserts is a Strawberry Pie. So, I of course made him one for his birthday!



Ingredients:
Crust:
- 2 cups crushed graham crackers
- 1/4 cup sugar
- 1 stick of butter, melted
- 1 teaspoon cinnamon

Filling:
- 1 1/4 cup sugar
- 1/4 cup cornstarch
- 1 1/2 cup water
- 3 ounce strawberry jello
- 1 quart strawberries (washed and sliced)

Mix all of the crust ingredients together and press into a pie plate. Bake for 5 to 10 mins at 350 degrees.


Add sliced strawberries to the cooked crust.


For the filling, boil the sugar, cornstarch, and water (DO NOT OVER BOIL)! Remove from heat and add jello. Let cool for a few minutes. Pour over strawberries. Cool and serve with cool whip!

Weekend Recap


Saturday was Jonathan's Birthday!! Friday night we celebrated at Michelangelo's and Saturday went to the farm to fish! It was a great weekend! Here are some pictures I took:

I love going to the farm. It is so pretty there and I love watching Hershey swim! It is always a great time to get my camera out!

Only 24 days!

Only 24 days until the first day of Spring! I saw this on Pottery Barn's website today. I really wish I was laying on these futon loungers, soaking up the sun and eating popcorn instead of this cold rainy day.


I am currently creating a Springtime thematic unit for school. Have I mentioned how I can't wait to be a teacher?! I have spent hours online this past week trying to find fun spring activities for my unit. I came across this blog, and have fallen in love! I already spend too much time reading blogs, but now I have discovered a whole new set of blogs! There are blogs that are created by teachers, how smart is that?! They give all kinds of fun and creative ideas! For example, I found this cute idea:


It is such a cute and fun way to teach students how to count by two's! Definitely adding this to my unit.

I love the book The JellyBeans and the Big Dance



I can't wait to read it to my class! I am sure the boys will appreciate it :) And I will definitely be adding jelly beans to my math lessons!

Tasty Tuesday: Quick Chicken and Wine

Today I want to share another recipe I found at allrecipes.com. It is called Quick Chicken and Wine and it is very delicious!

Ingredients:
- 4 skinless, boneless chicken breast halves cut into strips
- 2 eggs, beaten
- 1/2 cup Parmesan cheese
- 1 pinch salt
- 1 pinch ground black pepper
- 1/2 cup white wine
- 4 tablespoons butter


1. Season chicken with salt and pepper to taste. In shallow plate, spread Parmesan cheese. Divide chicken into three parts and dip seasoned chicken in eggs, then coat well with Parmesan cheese. Repeat until all the chicken pieces are well coated.


2. In a skillet, melt butter over medium high heat. Cook chicken, stirring frequently, until golden brown.


3. Reduce heat and add wine. Cover and simmer over low heat for 20 minutes.
