Scenes from the Zoo

This past weekend, my parents took Jonathan and I to a drive through zoo. It was so much fun!! I felt like a little kid again! God is so amazing and creative! Just look at these pictures, these animals are so beautiful. The zebras are my favorite!

It was amazing to see buffalo, zebras, camels, deer, ostrich, etc. all roaming around together!


Tasty Tuesday

Today I am going to share a Four-Bean Taco Chili recipe with you. It's not a summer food, but it sounded good to us! It is easy, cheap, and healthy!

Ingredients:
- 2 pounds ground beef
- 3 cups tomato juice
- 1{16 oz.} jar salsa
- 1 {16 oz.} can kidney beans, rinsed and drained
- 1 {15.5 oz.} can great northern beans, rinsed and drained
- 2 {15 oz.} cans black beans, rinsed and drained
- 1 {16 oz.} can corn, rinsed and drained
- 1 {8 oz.} tomato sauce
- 1 {6 oz.} tomato paste
- 1 {4 oz.} chopped green chilies
- 1 package taco seasoning

Steps:
In a dutch over, cook beef and drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer uncovered for 15 minutes.

It makes a ton!! We put some in the freezer for later!

The Perfect Summer Dessert

The perfect summer dessert is Key Lime pie!

Ingredients:

- 1 {14 oz.} sweetened condensed milk
- 4 egg yolks
- 4 oz. key lime juice {I use Nellie & Joe's Famous Key West Lime Juice}
- cool whip
- graham cracker crust

Steps:

Combine milk and egg yolks at low speed. Slowly add juice, mixing until well blended. Pour into 9 inch graham cracker pie shell. Bake at 350 degrees for 12-15 minutes. Top with whipped cream/cool whip. Refrigerate overnight

Five things that Make me Happy Friday!

What a beautiful Friday!! I have today off from subbing, which means I got to sleep in! The weather is beautiful so my morning consisted of eating breakfast, drinking coffee, spending time with Hershey, and reading a good book out on our deck. It was the perfect way to start off the day. I am very excited it is Memorial weekend! I hope you all have had a great week and I hope you enjoy your three day weekend!

Crock-pot Chicken and Vegetable Pasta

Today I am going to share another yummy and easy recipe with you! It is called Crock-pot Chicken and Vegetable Pasta.

Ingredients:
- 1 to 1 1/2 pounds chicken breasts, cubed
- 1 medium (or 2 small) zucchini, quartered and sliced 1/2 inch thick
- 1 green bell pepper, coarsely chopped
- 2 to 3 cloves garlic, chopped
- 1 (28 oz.) can crushed tomatoes
- 1 (15 oz.) can diced tomatoes
- 1 package country gravy mix
- 1/2 teaspoon dry sweet basil
- 1 teaspoon dry leaf oregano
- Pasta of your choice


Combine all ingredients in the slow cooker. Cover and cook on low 6-9 hours.


Serve over hot cooked pasta.


Goes great with a yummy salad!
